Seafood Salsa Dip

This seafood salsa dip is one for the books. These days more people are interested in eating healthier and lighter so rich, creamy, cheesy dips are becoming a thing of the past, even more so at parties and get-togethers.  Today.com has a great spin on the regular, boring salsa that is light, healthy, and best of all- EASY!  This would be the perfect option to bring to a potluck, picnic or barbecue.  This recipe serves 4 and only takes 15 minutes to prepare!!

Ingredients

    • 3 cups Dungeness crab meat
    • 1 cup chopped cilantro
    • 3/4 cup chopped tomato
    • 3/4 cup chopped mango
    • 1 teaspoon crushed red pepper flakes
    • 2 tablespoons freshly squeezed lemon juice
    • 2 tablespoons freshly squeezed lime juice
    • 1 tablespoon agave syrup
    • 1/2 teaspoon finely minced jalapeño (optional)
    • Sea salt and fresh ground black pepper, to taste
    • 1 large avocado, diced
    • 1 bag tortilla chips, for serving

Preparation

In a large, non-reactive mixing bowl, gently toss the crab meat, cilantro, tomato, mango, red pepper flakes, lemon juice, lime juice, agave syrup and jalapeño together to evenly combine. Season with salt and pepper to taste.

Salad Ingredients

3 cups mixed salad greens
8 whole romaine leaves
1 pint grape tomatoes, halved
One 14-ounce can kidney beans, drained and rinsed
One 4-ounce can pitted mixed olives
2 red bell peppers, sliced
2 yellow bell peppers, sliced
4 hard-boiled eggs, peeled and sliced
2 avocados, sliced
8 ounces mushrooms, sliced
8 ounces fresh mozzarella, cubed
1 English cucumber, halved then sliced
1 bunch asparagus, blanched and sliced into pieces
1/2 cup sunflower seeds
8 radishes, halved
Salt and ground pepper

Homemade Creamy Ranch Ingredients

Herby Ranch Dressing:
1 cup (real) mayonnaise
1/2 cup buttermilk (more as needed to reach desired consistency)
1/2 cup sour cream
1/4 cup Italian flat-leaf parsley leaves, chopped
2 tablespoons chopped fresh chives
2 teaspoons chopped fresh oregano
3 teaspoons white vinegar
2 teaspoons Worcestershire sauce
Salt and ground pepper

Ranch Directions:

Combine the mayonnaise, buttermilk, sour cream, parsley, chives, oregano, vinegar, Worcestershire sauce and salt and pepper to taste in a bowl. Chill for a couple of hours before serving.

Pork Tenderloin with Seasoned Rub

The seasoned rub that you apply to this tenderloin is a great recipe that will have all of your guest asking for more.

Ingredients

  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon dried thyme
  • Salt
  • 1 1/4 pounds pork tenderloin
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic

Directions

Preheat the oven to 450 degrees F.

In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.

In a large skillet over medium-high heat, add the olive oil and heat. Add the minced garlic and saute, stirring, for 1 minute. Put tenderloin in the pan and cook for about 10 minutes, searing each side using tongs to turn the meat. Transfer meat to a roasting pan and bake for 20 minutes. Slice and serve.

How to Make:
  • The first step is to have all of your ingredients together and ready for you when you start cooking. This recipe moves fast.
  • Adjust your oven shelf at least 8-inches away from the heat element in your oven to prevent burning.
  • When browning butter, the heat needs to be on medium-high. After your butter melts, watch it continuously while it bubbles up, then foams and starts to give off a nutty aroma. At this point, stir it occasionally and swirl the pan carefully until the foam subsides. You’ll be left with a dark golden hue and some charred bits on the bottom of your pan. From here you need to act quick.
  • Allow the honey to melt completely though the browned butter before adding garlic.
  • When adding lemon juice, be careful of the butter splattering.
  • Add the salmon with the top facing up (skin-side down) and baste it while it cooks in the skillet.
  • Before broiling, you can add lemon wedges around your salmon if you like your sauces to take on more of a citrus flavour OR leave them out for a milder taste.
  • While broiling, keep an eye on the salmon as it can easily go from slightly charred to burnt very quickly. Put your timer on for 3 minutes and keep watching from there.

  3. In a clean skillet over medium heat, add a flour tortilla. Top with Monterey Jack, cheddar, cooked chicken mixture, avocado and green onions. Place another tortilla on top and cook, flipping once, until golden on both sides, about 3 minutes per side. Repeat with remaining ingredients.
