Wild Game Jambalaya

 

This venison sausage and duck breast jambalaya is a staple recipe that could be used with any of your favorite types of wild game meat. As stated on the website where you can find more information on the recipe here, this method is not your typical jambalaya with tomatoes, although you are more than welcome to add them to your liking. This technique is referred to as “brown jambalaya’. Either way, with or without tomatoes and whichever wild game meat you decided to use, this jambalaya is sure to be a family favorite that could easily be made to feed a large group.

Ingredients
2 Tbsp. canola oil
2 links venison Andouille sausage, sliced ¼ inch thick
12 duck breast tenders
1 medium onion, chopped
3 stalks celery, sliced
1 green pepper, chopped
3 garlic cloves, minced
1 tsp. kosher salt
1 tsp. black pepper
1 tsp. cayenne pepper
1 tsp. smoked paprika
Pinch of sugar
1 cup poached pheasant, shredded
2 cups uncooked rice
4 cups pheasant or chicken stock

Directions
1. Heat canola oil in a Dutch oven or stockpot set over medium-high heat. When the oil starts to shimmer, add the sliced Andouille. As the sausage browns, add the duck tenders to the pot, followed by the mirepoix of onions, celery, green pepper. Sauté for 3 to 4 minutes, scraping the bottom of the pan to remove any browned bits.

  1. Sprinkle the seasonings and sugar each over the meat and vegetables to cover them well. Stir and sauté for a few minutes, then add the minced garlic. Cook for 30 seconds, until the garlic becomes fragrant.
  2. Add the poached pheasant, along with the uncooked rice and stock. Raise the heat to high, then let everything come just to the boiling point. Lower the heat to a slow simmer, cover the pot and cook for 25 minutes, or until the rice is cooked through.

Local Houma Doctor Saves Dog in House Fire

 

Clint Hartsock, 27 year old, first year Resident Physician assisted the Houma Fire Department help save a family pet during a devastating house fire. Each member of the house escaped safely but they were quickly frantic to learn their new, three month old dog was still inside.

It’s safe to say that Hartsock was in the right place at the right time when he was leaving his shift at Leonard J. Chabert Medical Center’s internal medicine program. “I was driving home from the hospital after my shift and as I came out the other side of the tunnel I saw this big plume of black smoke,” Hartsock said. “I just wanted to stop to make sure everyone was OK. Usually first responders have things like that locked down, but if it’s a big fire or anything like that, an extra pair of hands can be useful.”

Louisiana State Fair Less Than One Month Away

 

The Louisiana State Fair will be taking place in Shreveport, Louisiana in less than one month, kicking off on October 26, 2017. Lasting over 2 weeks full of some of the best entertainment Louisiana has to offer, the last day of the fair will be November 12, 2017.

Not only will this event host musical entertainment, a carnival, several food vendors, but also weeks full of completion ranging from 4-H events, cheer competitions, cooking rivalries, and the Bayou State Arm-wrestling tournament.

Tilapia Fish Tacos

 

Have you been looking for a delicious fish recipe that everyone enjoy? Check out this mild tilapia recipe that you can put into tacos! There’s no way the kids will pass this one up- and neither should you since you can make it all in less than 30 minutes! Ingredients

  • 1 lb Tilapia fillets
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp coriander
  • Salt and pepper for seasoning fish
  • 1 tbs olive oil
  • Finely chopped cabbage
  • 12 Corn tortillas, warmed
  • Sliced Avocado
  • Pico de Gallo

Instructions

  1. If making your own pico, rather than using a store bought version, start by mixing together Pico de Gallo ingredients, and seasonings, refrigerate for 15 mins.
  2. Meanwhile, mix the chili powder, cumin, coriander, and salt and pepper together and season tilapia fillets by rubbing it onto both sides.
  3. In a Heavy Bottom Frying Pan , heat olive oil, and pan fry the tilapia for 2-3 mins per side depending on thickness of filet.
  4. After cooking, flake with a fork and set aside
  5. Chop cabbage finely
  6. Warm tortillas in pan that you used to cook the tilapia.
  7. Assemble into corn tortillas, use sour cream, and other taco toppings to liking
  8. Serve warm

Calcasieu School Board Earns National Award

 

Calcasieu School Board was nationally recognized this week when they received the 2017 Partnership District Award from the National Network of Partnership Schools at Johns Hopkins University.

This award is given to school districts who have made progress in leadership and goal-linked programs that engage family and local community- both of these being linked to student success. “The Calcasieu Parish School Board is applying research-based approaches to help schools become welcoming places that engage parents and the community in ways that improve student attendance, behavior, achievement, health, graduation rates, postsecondary plans, and other outcomes,” said Dr. Joyce L. Epstein, director of NNPS (National Network of Partnership Schools)
