68 year old Woman Reels in Massive 135 lb. Bass

 

Louisiana is well known for being the Sportsman’s Paradise but this 68 year old lady found her paradise when she was fishing with her son off the coast of Australia. It was quite the surprise when she realized the fish she was reeling in was taller than her! And her son couldn’t believe his eyes either, he stated “I’m very proud of her, very jealous as well. I’d said she wasn’t even meant to be fishing, only to be watching.

Louisiana Awards $1.5 Million to Improve Early Childhood Education

 

Louisiana is doing big things to make a difference in the lives of their youth. Starting at the bottom, the Louisiana Department of Education awarded a $1.5 million grant funding the improvement of early childhood education and its quality. The eight communities affected by this grant include: Calcasieu, Concordia, Iberville, Jefferson, Orleans, Rapides, St. John the Baptist, and Tangipahoa parishes.

The Department of Education stated on their website, “The grant, a supplement to the federal Preschool Development Grant, will provide teachers at low-performing sites in eight communities with professional development designed to strengthen teacher-child interactions and classroom instruction and to improve kindergarten readiness.”

New York Times Top Spring Recipes: Fettuccine with Asparagus and Smoked Salmon

 

Spring is in the air! It’s time to open those windows and enjoy the beautiful fresh air while you whip up something delicious in the kitchen. The New York times was so excited about spring they decided to share 14 of their best spring recipes, which you can find here, as a part of their Editor’s Collection online this month.

Out of the 14 amazing recipes they shared, we were particularly drawn to the Fettuccine with Asparagus and Smoke Salmon. Not only is this recipe creamy and delicious especially when used with fresh asparagus, but it only takes 35 minutes to cook!

INGREDIENTS

  • ½pound fresh asparagus, medium thickness
  • Salt
  • 1tablespoon butter
  • ½tablespoon minced shallots
  • 1cup heavy cream
  • 4ounces smoked salmon sliced 1/4-inch thick
  • Freshly ground black pepper
  • 1teaspoon fresh lemon juice
  • 9 to 10ounces fresh green fettuccine noodles
  • 2tablespoons minced fresh dill

 

PREPARATION

  1. Snap off the ends of the asparagus where they break naturally and peel the stalks. Cut the asparagus on a slant to pieces about an inch long.
  2. Steam the asparagus until they are just barely tender and still bright green, about three minutes. Rinse under cold water, drain well on paper towels and set aside.
  3. Bring a large pot of salted water to a boil for the pasta.
  4. While the water is coming to a boil, melt the butter in a large heavy skillet. Add the shallots and saute until soft but not brown. Stir in the cream and simmer about five minutes, until the cream has thickened somewhat.
  5. Cut the salmon into slivers, add it to the cream and remove the skillet from the heat. Season with pepper and lemon juice. Add the asparagus.
  6. When the pot of water is boiling, add the fettuccine, stir it once or twice, then cook two to three minutes after the water has returned to a boil. Drain well.
  7. Briefly reheat the sauce. Transfer the fettuccine to a warm serving bowl, pour the sauce over it and toss. Sprinkle with dill and serve.

Loyola University Wins Recycling Grant

 

Loyola University has recently been awarded an exciting grant! The advocate.com states, “Loyola University last week became one of 50 institutions nationwide to win a Coca-Cola/ Keep America Beautiful Public Space Recycling grant. The university will use the grant to purchase 30 recycling bins to be placed in all five residence halls. The 32-gallon bins are expected to help Loyola recycle an additional 45,000 gallons of waste per year. Loyola’s Student Government Association applied for the $5,040 grant as part of a sustainability initiative titled Maroon, Gold and Green. More than 800 government agencies, schools, universities, nonprofits, tribes and community organizations vied for the recycling grants.”

According to nola.com, Gulf Shores will be receiving the following, “The public beachfront area at Highway 59 and Beach Boulevard in Gulf Shores, Ala., is getting a major upgrade that includes a handicap access mat to ease the stroll through the sand for those with physical limitations or those hauling their gear to the beach, AL.com reported.”
